Carovigno is small town you'd never think of visiting if not for Osteria gia Sotto L'Arco, the hidden jewel on route from Ostuni to Bari.
Dinner there is a ceremonial event and worth starving the entire day for.
Outside are ancient city walls and piazza glistening under the lamp light, but inside the 18th century palazzo is a world-class restaurant, considered by many to be the best in Puglia.
The room is ultra elegant, with marble flooring, vaulted ceilings, draped curtains, mint green doors and period leather chairs.
The mood is of a gentleman's club with the low lit table lamps, crisp white table cloths, and soft 30s music.
Husband and wife team, Teodosio and Teresa, certainly know how to create a banquet, him a handsome sommelier of some distinction and early morning shopper for local produce, her a highly imaginative chef of haute cuisine.
We had an excellent 2005 Zinfandel wine from the region, and four mouth-watering courses including a sensational mushroom and pecorino starter, seafood cannelloni, grilled fish, and orange tarte with ice cream desert.
But the dishes are all so light and fresh you just glide down the stairs afterwards, wishing you could take the chef home.
